The Tilting braising pans are ideal for large kitchens because they make it possible for the operator to handle large quantities of food easily, safely and quickly. The size and shape of the inner wells with wide radius corners make it possible to move all the food with a normal utensil, ensuring that the food is distributed evenly and does not burn. The perfect ratio between diameter and depth avoids wide temperature differences and makes the well easier to clean. The electronic panel regulates in a precise fashion so that food does not spill over, whatever the angle of inclination of the pan may be. Pressure braising pans feature polished a chromium nickel steel plated cooking surface for roasting, browning, stewing, preparation of sauces, pressure cooking, sautéing, steaming, boiling, pressure less steaming, pressure steaming and braising. Cooking temperature and cooking time can be precisely set through state of the art control panel. A food sensor temperature is built into the base plates which permits precise temperature cooking. Both Pressure and Tilting with Pressure braising pans come in gas and electric models.
